Teriyaki Tofu 

I don't know about you, but I was never a big fan of tofu. I found it tasteless, chewy and just not my kind of food. Recently, I realised it actually doesn't have any taste of its own. That’s why it's easy to use in cooking and even baking. 


I will share some vegan bake recipes using tofu soon.


This tofu recipe is so flavourful, delicious and easy to make. It is really great comfort food and has  become our once a week go-to dinner. Baked to golden brown and tossed in teriyaki sauce!

Teriyaki is a super flavorful glaze with a subtle sweetness and complementary flavours of sesame, soy sauce, rice vinegar and garlic.

Freshly baked teriyaki tofu over a bed of sticky rice is just super easy and super yum. I like to add some stir fry veggies just to get more veggies in our bodies. 

The strong delicious flavors are what you need after a long day! You really need just a few ingredients to make a high-protein and low- fat meal with all the flavours you want.

INGREDIENTS

TOFU 

  • 1 Block Extra Firm Tofu 
  • 3 Tbsp Cornstarch 
  • 1 Tbsp Olive Oil 
  • 1 Tbsp Soy Sauce 
TERIYAKI SAUCE 
  • 1/2 Cup Soy Sauce 
  • 1/4 Cup Honey 
  • 2 Tbsp Rice Vinegar 
  • 3 Cloves of Garlic 
  • 1 Tbsp Cornstarch + 2 Tbsp Cold Water

INSTRUCTIONS

1. Start by pressing your tofu.( Wrap the tofu block in a towel and place something heavy on top (books are a good option)
2. Preheat your oven to 200 degrees C.
3. Once the moisture is removed, cube the tofu, set a side. Mix the rest of the ingredients in a bowl. 
4. Toss the tofu in the mixture evenly and assemble on a baking tray covered with parchment paper, make sure the tofu cubes do not touch.
5.Bake for 25-30 min, flipping half way trough, until they are nicely browned and crispy!
6. Now prepare your teriyaki sauce by adding all the ingredients, except the cornstarch and water,to a pan over medium heat and bring to a simmer.
7. Cook for 5 minutes, stirring often.
8.Mix together water and cornstarch in a small bowl until cornstarch is dissolved. 
9. Slowly pour into the pan while whisking constantly until combined. Cook for 2 more minutes until thickened whisking constantly.
10.Take tofu out of the oven when is done. Let it cool down a little. Pour half of the sauce onto the tofu and mix to coat.
11. Serve tofu over rice, add more sauce on top, sesame seeds and spring onions. 
12. ENJOY
