DELICIOUS HUMMUS
This is my favourite hummus recipe. Easy, quick and absolutely delicious.
Every time we went for groceries shopping, we would always pick up hummus. Is like the thing we have always in the fridge. For the longest time I wanted to make it, but I never made it until now.
I think I could make it little more smoother but I must say the taste is very yum so i guess it works :)
What is hummus?
Hummus is delicious spread or dip made from chickpeas, tahini, lemon and spices.
It's commonly eaten in the Middle East and the Mediteranean. I have to tell you the best hummus I've ever tried was nowhere else but Dubai.
So I decided to make it at home.
INGREDIENTS
1 can of chickpeas or 250 g of cooked chickpeas
60ml fresh lemon juice (1 large lemon or 2 smaller ones)
60 ml well stirred tahini sauce ( see our EASY TAHINI RECIPE )
2 minced garlic cloves
30 ml extra virgin olive oil (plus a bit for serving)
1\2 teaspoon of ground cumin
salt to taste
2-3 table spoon of water
dash of red paprika for serving
INSTRUCTIONS
Secret of good hummus is the order in which you add the ingredients. So first combine the tahini and lemon juice in the food processor and process for 1 minute,this first step will make your hummus smooth and creamy.Add the olive oil, garlic, cumin, and 1/2 teaspoon of salt to the mixture of tahini and lemon juice.
Process for 30 seconds, scrap the side and bottom of the bowl and process again.
Add half of the chickpeas to food processor and process for 1 minute. Add the remaining chickpeas and process until smooth.
Most likely hummus will be still too thick, add 2-3 tablespoon of water. You can also add ice-cube in the end or drizzle of cold water. This last trick makes the hummus fluffy and creamy.Taste if needed add little bit of salt.Serve hummus with drizzle of olive oil and red paprika.
You can store it up to one week, if you don't finish it before just like us :))
