Simple feta bacon spaghetti

Spaghetti is such a delicious and easy comfort food. Very often happens when we don't know what to order outside or cook at home, we simply choose spaghetti. Either spaghetti Bolognese, or carbonara, or any other white sauce or red sauce spaghetti. 
I realised that I like spaghetti after my trip to Italy. Is true that I've eaten it before, but it was nothing like THOSE ITALIAN SPAGHETTI. 


I love carbonara, is my second favourite. So you wanna know what are my first favourite spaghetti? It is my very own recipe very similar to carbonara, but because in our house we are cheese lovers. I replace egg with feta cheese. I also don't like if there is way more sauce then spaghetti, which is unnecessarily creamy and watery and most of all too heavy,like "I add to my spaghetti whatever I find in the fridge", ugh! I prefer my food to be tasty and light and of course nice looking on the plate.  






The simple ingredients are familiar, easy to make, and it’s a quick fix, too. You must know the real secret of perfect spaghetti is not to over cook them. Oh God, I really don't like those soggy "spaghetti" some people do. The real spaghetti are the "AL DENTE" (describes pasta/spaghetti that is cooked to be firm to the bite).  In contemporary Italian cooking, the term identifies the ideal consistency for pasta and involves a brief cooking time. "MOLTO AL DENTE" is the culinary term for slightly undercooked pasta. Which is used in the first round of cooking when a pasta dish is going to be cooked twice. But back to our feta spaghetti. The recipe is really really easy, see yourself.

So our ingredients:
250g (or half of the sachet) of spaghetti
1 block of feta cheese (cut for small squares)
150g bacon (cut for small pieces)
2 tbs of Mixed herbs (you can also add fresh herbs)
2 tbs salt
1 large egg
olive oil 



Instructions:
Take a big  pot and add water in it, add 1 spoon of salt 1 spoon of olive oil, let it boil. When the water start to boil add spaghetti, cook on medium fire for 8 minutes to al dente, if you like it little more softer, let it cook for 10 minutes. 

Meanwhile take two cooking pans, one we will need for bacon, the other, preferably little deeper one, will be for the feta sauce.

So on the one pan just place the bacon on it, since bacon has it own fat we don't need to put any oil,just place it there and let it cook until the bacon is nice and golden. 


Take the other pan and add a spoon of olive oil, let it preheat for one minute, add feta, and stir without stopping on small heat, we don't want our sauce to get knocked) , add mixed  herbs. Don't stop to stir.
Now our bacon should be golden and nice so we add it to the feta sauce and gently stir it together.
After the spaghetti are nicely cooked, remove the water from the spaghetti and one egg in it and gently stir it together, you can add little more salt. 
Now we are almost done, the last step, just add all the sauce into the spaghetti and stir it together.
Done, and ready to eat.
